The volatile oil obtained by steam distillation from the crushed bulbs or cloves of the common garlic plant. It is a clear yellow to reddish orange liquid having a strong pungent odor and a characteristic of garlic. It is soluble in most fixed oils and in mineral oil. It may be incompletely soluble in alcohol. It is insoluble in glycerin and in propylene glycol.
It contains allicin and various kind of chemical compounds. And it is quite promising in the field of medicine, food and brewing industry.
